This Watermelon and Cucumber Salad is the perfect way to celebrate a warm and sunny summer day, especially when you pair it with a light glass of wine. This healthy salad is full of watermelon, cucumber, feta, avocados, and mint.  {gluten free}

Watermelon and Cucumber Salad with mint and avocado

Can you believe that summer is almost here?  I've been waiting so long for fresh watermelon, asparagus, and corn on the cob. Haven't you?  Oh yeah, and what about fresh peaches, blueberries, and blackberries?  I'm in!

For me, summer means eating outside with a tall glass of wine, fresh seasonal goodies while the sun is setting.  Oh yeah and longs day at the pool, sunburn and bike rides... long live summer!

I am all about planning some delicious seasonal summer dishes that highlight the flavors we can only find during the summer like this Watermelon and Cucumber Salad. It will become your go-to for spring and summer events, cookouts and regular old weeknights.

Watermelon and Cucumber Salad with avocado, mint and lime

This Watermelon and Cucumber Salad is full of all the delicious goodies that summer has to offer like fresh watermelon, cucumber, avocado and big chunks of salty feta.  It is topped with pistachios and LOTS of fresh mint. The watermelon and cucumber are super hydrating and refreshing especially when it's hot outside.  The feta adds a salty, rich flavor and you get some crunch from the pistachios.

The dressing is made simply with fresh lime juice, olive oil and a bit of salt. What could be easier?

Well, pairing it with a crisp, light Cavit Pinot Grigio really takes it over the top. The flavors marry perfectly and the wine doesn't overpower the salad.  Did you know that Friday, May 26th is National Pinot Grigio Day?  Can you think of a better holiday?  I can't and I'm thinking we should declare every Friday of the summer National Pinot Grigio Day!

Ingredients

  • 2 cups cubed watermelon
  • 1 cup sliced English cucumber
  • ½ cup cubed feta
  • ½ avocado, cubed
  • 10 mint leaves, torn
  • ½ cup pistachios

Dressing

  • ¼ cup olive oil
  • 3 tablespoon fresh lime juice
  • salt (not too much bc feta is salty)

Instructions

  • Add all salad ingredients in a large bowl except pistachios. 
  • In a small jar add all dressing ingredients and shake well.  Dress salad generously with dressing.  The lime juice should keep the avocado from browning. Toss gently.
  • Add pistachios right before serving so they don't get soggy.

    I can not believe summer is almost here, mostly because we still keep getting a few chilly days, but I'm SO excited! I absolutely love summer. It's like one big excuse to kick back and relax. 🙂 And this salad screams summer! I love love love this combination of ingredients and flavors! So fresh and fabulous! Plus, I'm a huge fan of Cavit wine, so a few glasses of their Pinot Grigio and a serving size bowl of this salad -- I'll be good to go! Cheers, friend!

    Ready and in middle of a nice sunny hot summer day. I wanted to make this salad to refresh my body with healthy and easy salad. My only complaint is the price of pistachios WOW!! $8.59 a bag of shelled nuts. So I got sunflower seeds instead. I am posting picture to my facebook page. I even bought the wine!

      You are right, pistachios are expensive. I sometimes get a good deal at Costco but I hate having them around the house bc then I eat too many. Glad you enjoyed it and will look for your photo!
