Spring Green Salad with Asparagus

This gorgeous Spring Green Salad with Asparagus is the best way to welcome Spring!  It's full of seasonal Spring produce, salty feta and drizzled with lemon dill vinaigrette.  It's perfect for Easter, Mother's Day or bringing to a Spring party.  {gluten free}

It's officially Spring and it's beginning to feel like it here!  That's why I'm celebrating today with this gorgeous Spring Green Salad with Asparagus.  It is chock full of Spring goodies that will make you excited for warm weather, grilling, and gardening to come.

The base is a combo of mache greens and romaine.  Then it's topped with blanched asparagus, peas, radishes, avocado, and feta.  I made a very simple lemon-dill vinaigrette that uses pantry staples and doesn't even require fresh dill.  This Spring Green Salad with Asparagus has a little bit of everything going on in there: crunchy lettuce, tart radishes, creamy avocado and the best part - those huge chunks of salty feta.

Spring Green Salad with Asparagus

This gorgeous Spring Green Salad with Asparagus is the best way to welcome Spring! It's full of seasonal Spring produce, salty feta and drizzled with lemon dill vinaigrette. It's perfect for Easter, Mother's Day or bringing to a Spring party. {gluten free}

Ingredients

  • 1 3.5 oz mache greens
  • 1 cup romaine, chopped
  • 1 bunch asparagus, blanched
  • 1 ยฝ cups frozen peas, thawed
  • 4 whole radishes, julienned
  • ยฝ avocado, cubed
  • 1 cup feta, cubed
  • โ…“ cup avocado oil (or olive oil)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dijon mustard
  • ยผ teaspoon dried dill (more or less to taste)
  • pinch kosher salt and pepper

Instructions

  • Bring a large pot of water to a boil and add 1 tablespoon of coarse salt to the water. Boil asparagus for about 4 minutes and then drain in a colander.  Then place it in a large bowl of ice water to stop the cooking.
  • Put all salad ingredients into a large bowl starting with mache greens and romaine.  I julienned some of my radishes and cut some in half.
  • Place all dressing ingredients into a jar with a tight-fitting top. Shake well. Dress right before serving.

    I definitely hear the birds chirping this past couple of days! Just yesterday I saw some birds taking the burlap off our trees (I guess for the nest). The sun has been shining (finally) and it's melting snow. Woo ho! I love a good salad and could eat every day. This one looks so tasty and is packed with so much goodness! Love the asparagus in there and that vinaigrette with dill sounds like the perfect touch!
